I've been given the job of writing the diabetic recipe section of this website because I've been a diagnosed type 2 diabetic for ten years, and on the first day of my diagnosis I was urged to eat more vegetables. Until that time I had not enjoyed eating vegetables very much, but I had eaten them almost every day. Now I was being urged to eat even more and had no idea where to start. Ten years later after trawling every diabetic recipe resource known to man I have learned one thing, diabetic recipes don't have to be boring tasteless food when it comes to vegetables.
Diabetic Salad Recipes
In my quest for diabetic recipes and other healthy recipes as well as low fat recipes there really wasn't any easy healthy recipes that I didn't try. I followed the path of trial and error, and let me tell you there was a lot of error amongst the trial. I tried low fat salad recipes, green salad recipes, crab salad recipes, dairy free recipes for ages until I came to realise that what I was looking for was a fool's errand. In fact, on analysis, my favorite vegetable salad recipes were great diabetic recipes for me to make anyway. So here is one of my favorites which you can make too. My diabetes has come under control following my diagnosis, and this pasta salad helped me get there, and stay sane.
Perfect Pasta Diabetic Salad Recipes Ingredients
1/2 pound small dried penne pasta
2 x cans of tuna packed in water or oil, your choice
1 stalks of celery with leaves, chopped finely
1/2 onion, finely diced
1 cup cooked frozen peas, beans, and carrots
1/2 cup mayo
Salt and pepper to taste
Perfect Pasta Diabetic Salad Recipes Method
Cook pasta until it is soft enough for your liking. Combine frozen vegetables with pasta along with celery, onions, tuna. Mix well. Add in Mayo or yoghurt, adding more if required to keep the salad moist. Season with salt and pepper to your taste. With my kind of diabetes, this recipe is fine as it does not involve any sugar. The slow release complex carbs of the pasta keep my sugar levels in check for a long time, and the fat of the mayo or yogurt keeps my taste buds going strong. This was my favourite salad before I got diabetes, and it was the diabetic recipe that got my diabetes under control.
